I give this recipe a 4.5/5 simply because the acidity is a little high for me! Keep scrolling for the recipe (don’t worry, I added it before any boring writing). By no means are these traditional, but for about 10 minutes total including cook time, you can’t go wrong with this recipe.
I love this recipe because of how customizable it is. Sometimes I add bell peppers to the mix, other times I top with cabbage, salsa, and sour cream. It really just depends on what I have on hand. This week, I only had everything shown below. Of course, if you eat meat, some nice cuts of beef or even chicken breast would be delicious in this!

This recipe is such a time-saver during the busy week, and the taste of the enchilada sauce helps with my constant craving for Mexican cuisine. If I could afford to eat at our local favorite restaurant everyday, I would. Since I can’t justify spending that much, this recipe scratches the itch.
